STREET FOOD .. Upside down!

Many of us have for years been passionate about Italian initiatives related to the so-called "street fooding" from simple markets to real Festival, the most important and colorful of which is held every year in Cesena .

The street food like and we like it, it's easy to say: there are times when the pain really worth queuing for a bag of steaming hot fried dough, for a large of cedar, coffee, or a piadina as God intended.

The phenomenon - exploded years ago and ever expanding - also deserves a different interpretation, and this is worth watching with your eyes .. of street!
In contexts where the restaurant requires a substantial investment in terms of premises, facilities and personnel, the street food (strictly gourmet-version!) approaches to the most receptive and follows on the heels of the demonstrations and events most successful.
The more elaborate dishes are prepared in laboratories, then in cooking and presentation aimed directly in front of customers.
In cities with a tweet you know in real time the location of your (so to speak) "carts" favorites!
The meteorological factor certainly has its weight, and in Italy from this point of view we are not made so bad; altrocanto of it is true that in the beautiful country spaces and rules do not facilitate some of the successful initiatives undertaken trade based on this platform. But ..
does not matter whether it's ethnic food or our traditions, nor that there is talk of unique dishes and even desserts . Just the common denominators are the quality and accessibility of the price.

The formula has many good reasons to be studied and applied as soon as possible here too.
